Comprehensive guide covering dough sheeter working principles, safety operation procedures, and daily maintenance requirements for food processing facilities.

Dough Sheeter Working Principle

The dough sheeter works by placing a measured amount of dough onto the lower conveyor belt. When the machine starts, the dough automatically moves between the pressing rollers. Under the combined action of the conveyor belt and pressing rollers, the dough is automatically fed and pressed. After pressing, the dough sheet is transferred back to the lower conveyor via the upper conveyor belt. Due to the different linear speeds, the dough sheet is automatically folded, transferred, fed, and sent to the next process. Through repeated kneading and pressing, the ideal pressing effect is achieved. The roller gap adjustment is achieved through a worm gear pair and eccentric mechanism, enabling stepless thickness adjustment. Users can adjust based on actual conditions and pasta processing requirements.

Safety Operation Procedures

1. Operators must be familiar with the working principle, structure, and performance of the machine they operate. Only trained and certified personnel may operate the equipment. Unauthorized personnel are strictly prohibited from operating the machine.

2. Before using the dough sheeter, install and adjust the pressing rollers and various accessories according to requirements while the power is disconnected. Only operate after confirming everything is correctly and securely installed.

3. During dough pressing operations, never place fingers near the rollers. Do not use hands to feed pressed dough or remove debris from the rollers while the machine is running.

4. Press levers and rollers must not be placed on trays to prevent them from falling and causing foot or other injuries.

5. After use, disconnect the power supply. Clean the pressing rollers and other removable components separately. Never wash powered equipment with water.

6. Perform regular equipment maintenance and upkeep. Keep the equipment clean and hygienic at all times.

Installation and Pre-Operation Checks

1. Before use, place the machine on a dry, well-ventilated, and level surface to ensure stable and reliable operation.

2. Carefully check for any metal objects or hard materials in the feed inlet and clean them promptly. Pull out the dough receiving tray before use.

3. Verify that the power supply voltage matches the machine requirements.

4. Extend the power cord fully. Connect the wire core with the ground symbol reliably to earth. Connect the remaining wire cores to the appropriate terminals on the disconnect switch. Close the switch, press start, and observe from the feed inlet that the moveable roller rotates downward correctly. Run the machine without load to verify all parts operate normally before processing.

5. Adjust the roller gap as needed using the handwheel. The adjustable roller can move forward and backward, allowing stepless gap adjustment from 0-25mm with uniform axial clearance, ensuring consistent dough sheet thickness.

6. To improve dough quality, extend machine life, and conserve energy, adjust the roller gap gradually from thick to thin during operation. The incoming dough thickness should be 2-4 times the outgoing thickness. Never place hands near the roller gap to prevent accidental injury. All maintenance and repair work must be performed only after disconnecting power.

Maintenance Essentials

7. After each use, thoroughly clean the machine to ensure food hygiene. When cleaning, do not use sharp tools to scrape the rollers, and do not clean with water spray hoses.

8. Apply lubricant to the gears through the oiling points once per shift. Use gear oil, No. 20 machine oil, or food-grade oil. Apply several dozen drops each time. Replace the grease in the worm gear, worm shaft, and bearings every six months using calcium-based grease.

9. Regularly check the tension and wear of the V-belts and adjust or replace them as needed.

10. When the machine will be idle for an extended period, apply a small amount of food oil to the surfaces of both rollers to prevent rust.
