Fish Filleting Machine: Features and Processing Workflow

Commercial fish filleting machines are primarily used for slicing various types of fish into uniformly thin pieces, with thickness ranging from 1.5mm to 6mm. These electric slicing machines are mainly designed for boneless fish such as salmon, herring, and tilapia.

Why Use a Fish Filleting Machine?

Fish is loved by many consumers for its rich protein and delicious taste. However, processing fish is not easy. Cutting thin fillets by hand requires significant skill, and manual cutting often results in uneven thickness and worker injuries. Using a fully automatic fish filleting machine can completely avoid these problems, with processing efficiency of approximately 280 to 600 slices per minute and 150-250kg of fish per hour.

Special Knife Design

  • The cutting tools are made of high-quality stainless steel for exceptional durability.
  • The machine features a specially designed blade set divided into upper blade group and lower blade group (angled blades).
  • During operation, the upper blade group moves left and right continuously to slice the fish, while the lower blade group moves upward to expose the cut fillets.

Fish Fillet Processing Workflow

  1. Fresh fish for processing must be cleaned and descaled. Open the belly, remove internal organs, and wash clean.
  2. Cut off the head and tail, as these bony parts cannot be sliced.
  3. Split the fish into two halves and remove the bones.
  4. Place the deboned fish into the feed inlet of the filleting machine, pulling the tray to lay the fish on the blades.
  5. Start the machine to slice the fish, then remove the sliced fillets using the tray.

Main Features

  • Simulates manual slicing principle using a gearbox to automatically cut fish into thin slices.
  • Simple drive mechanism, easy operation, safe and reliable. Blades are easy to remove and clean.
  • Suitable for slicing fish of various sizes with high production efficiency, replacing the work of 10 workers with just one operator.
  • Common slice thickness options: 1.5mm, 2mm, 2.5mm, 3mm, 6mm — maximum thickness can be customized.
