Importance of Proper Drying in Pasta Production

The drying process is the most capital and technology-intensive stage in pasta production lines, with critical impact on product quality and production costs. Problems such as brittle, damp, or sour noodles are directly caused by improper drying equipment and process parameters. Proper drying technology is essential for producing high-quality finished pasta products.

Multi-Stage Drying Process

Modern pasta drying employs a multi-stage approach that optimizes moisture removal while preserving product integrity:

Stage 1 - Pre-Drying: Initial surface moisture removal at moderate temperatures stabilizes the noodle surface and prevents sticking during subsequent stages.

Stage 2 - Main Drying: As the chamber temperature increases, the noodles continuously absorb heat, accelerating moisture evaporation. The internal moisture diffuses effectively to the surface, with dewatering capacity and drying speed approximately double that of the pre-drying stage.

Stage 3 - Final Drying: After the first two stages remove approximately 95% of moisture content, controlled temperature and humidity settings complete the drying process while preventing case hardening.

Stage 4 - Cooling/Stabilization: Following drying, the noodle temperature is gradually reduced to ambient levels. This stage primarily aims to lower product temperature using natural or forced air circulation, stabilizing the product before packaging.

Process Control Parameters

Temperature, relative humidity, and airflow must be precisely controlled throughout each drying stage. Adjustments are made by regulating hot air input volume and exhaust moisture extraction volume. Process parameters vary based on noodle type, thickness, and production line speed.

Equipment Operational Requirements

Noodle drying systems should feature PLC automatic control systems, human-machine interface color touchscreens, and high-temperature resistant heat pump units. Automated control ensures consistent drying conditions and repeatable product quality across production batches.

Maintenance and Safety

Regular cleaning of drying chambers, heat exchangers, and air circulation ducts is essential. Check temperature sensors and humidity probes for accuracy. Inspect conveyor systems and ventilation fans for proper operation. Maintain detailed process records for quality traceability.
