While these machines offer convenient and rapid operation, proper maintenance procedures are critical for ensuring product quality and extending equipment service life. Systematic care, cleaning, and maintenance directly impact production output and food safety standards.
Daily Cleaning Protocol
Per-Shift Cleaning: Disassemble and clean the dough feeding mechanism, filling delivery mechanism, and forming blocks after each production shift. Use soft-bristle brushes and neutral cleaning agents. Never use steel brushes or hard objects that could scratch precision surfaces.
Blade Care: After cleaning, reinstall blades in their original positions. Apply cooking oil to blade surfaces before startup to prevent dough adhesion. Replace blades monthly to prevent dull cutting edges from affecting product appearance.
Forming Block Assembly: Forming blocks typically consist of 9 pieces with alternating configurations of holed and non-holed blocks. The installation sequence is: first install a holed block with locating pin, then a non-holed block, then another holed block, continuing this alternating pattern. After installation, use the manual crank at the rear of the machine to test rotation smoothness - if too tight, blocks need reinstallation until proper clearance is achieved.
Seven Critical Care Rules
1. Dedicated personnel must be assigned for machine operation, maintenance, and cleaning.
2. Always disconnect power before any maintenance or cleaning procedure.
3. Check and adjust conveyor belt tension regularly to prevent slipping or excessive wear.
4. Inspect electrical connections monthly for tightness and signs of overheating.
5. Lubricate all moving parts including bearings, chains, and drive shafts on a weekly schedule.
6. Verify forming mold alignment and adjust if products show size inconsistency.
7. Maintain detailed maintenance logs documenting all service activities and parts replacements.
Safety Precautions
Never reach into the forming area while the machine is running. Keep loose clothing, hair, and jewelry secured during operation. Always complete the cleaning cycle before changing product types to prevent cross-contamination. Report any unusual sounds, vibrations, or odors immediately and stop operation until the cause is identified and resolved.
