Safety Operation Procedures for Dough Sheeter Use and Maintenance
The dough sheeter (压面机) is a critical piece of equipment in flour-based food processing. Its working principle involves placing a measured quantity of dough on the lower conveyor belt, starting the machine, and automatically transporting it to the rolling rollers. Under the combined action of the conveyor belt and the rolling rollers, the dough automatically completes the feeding and pressing process. After pressing, it is automatically transferred from the upper conveyor belt back to the lower conveyor belt. Due to the use of different line speeds, the dough sheet automatically completes folding, conveying, and feeding, turning to the next process. Through repeated kneading and pressing, the ideal pressing effect is achieved.
Safe Operation Procedures
- Operators must be familiar with the machine's working principle, structure, and performance, and can only operate after training and assessment. Unauthorized personnel are strictly prohibited from operating the machine.
- Before use, install and adjust the rolling wheels and accessories with the power disconnected. Confirm everything is correctly and firmly secured before starting operation.
- During operation, fingers must never approach the rollers. Do not use hands to feed or press noodles while the machine is running.
- Press bars, rollers, and other components must never be placed on the tray to prevent them from falling and causing injury.
- After use, disconnect the power supply. Clean the rolling wheels and other detachable parts individually. Never wash electrified equipment with water.
- Perform proper equipment maintenance and upkeep, keeping the machine clean and sanitary at all times.
Maintenance and Care Precautions
- Place the machine on a dry, ventilated, and level surface before use to ensure stable and reliable operation.
- Carefully check the feed inlet for any iron objects or hard debris and clear them promptly. Pull out the receiving tray before use.
- Verify that the power voltage matches the machine's rated voltage.
- Extend the power cord, reliably ground the wire with the grounding symbol, and connect the remaining wires to the switch terminals. After closing the switch, start the machine and verify the movable roller rotates downward from the feed inlet. Run a no-load test to confirm all parts are normal.
- Adjust the roller gap as needed by turning the handwheel to move the adjustable roller, enabling stepless adjustment within 0–25mm. Ensure the axial gap is even so the pressed dough sheet has uniform thickness.
- To improve dough sheet quality, extend machine life, and save energy, adjust the roller gap gradually from thick to thin. The input dough thickness should be 2–4 times the output thickness. Never bring hands close to the rollers to avoid accidental injury. All maintenance and repair work must be performed with the power disconnected.
- After each use, thoroughly clean the machine to ensure food hygiene. Do not use sharp objects to scrape the rollers, and do not use a water spray to clean them.
- Add lubricating oil to the gears from the oiling point once per shift. Use gear oil, 20# motor oil, or edible oil, adding several dozen drops each time. Replace the grease in the worm gear, worm, and bearings every six months using calcium-based lubricating grease.
- Check the tension and wear condition of the V-belt regularly and adjust or replace it as needed.
- When the machine is not in use for extended periods, apply a small amount of cooking oil to the roller surfaces to prevent rust.
